Name of Parameter: Total anthocyanin content
Working Principle: Anthocyanins are naturally occurring pigments belonging to the group of flavonoids, a subclass of the polyphenol family. It is extracted in acidified methanol solvent (Methanol-HCl) and produces ranges of colour that varied from red to purple. The intensity of colour is measured in spectrophotometer at 535 nm and expressed as mg total anthocyanin 100 g-1 of sample.
Application/Scope: It can be used to measure anthocyanin content of brown rice, milled rice and various processed/value added products of rice
