Name of parameter: Alkali spreading value of grain
Working Principle: It measures the degree of spreading using a seven point scale (1 = intact, 7 = greatly dispersed) and corresponds to gelatinization temperature as follows: 1–2, high (74.5–80 °C); 3, high-intermediate; ‘5, intermediate (70–74 °C); and 6–7, low (< 70 °C). It is done by overnight soaking of milled rice grain with 1.7% KOH solution.
Application/Scope: It is associated with gelatinization temperature and cooking time.
Sample Requirement: 20.00 g rice grain without any impurities
Charges: Brown – Rs.750.00, Milled – Rs.980.00 per sample
